Have you ever been given a brace of pheasant, a pigeon, a rabbit or perhaps a deer carcass?
Tina’s Game cookery workshop will introduce you to a modern way of preparing game in a few easy steps.
Not only will you learn how to pluck, skin and butcher but also
how to prepare a number of simple and delicious meals. Tina will share
some of her favourite game recipes with you and after a pleasant day of
cooking will sit down with you for lunch to share the fruits of your
labours.
Your guests back home will marvel at your newly-found cooking
skills – after all how many hosts have the skills to dish up wild duck
or a tender pigeon breast for dinner?
What do you get out of the course?
Topics covered:
- Tips on hanging – humidity, temperature, length of time, bloom etc.
- Demonstrations on plucking, skinning, butchery and preparation of meat for cooking e.g. how to wrap pigeon or woodcock in bacon.
- Cooking techniques including sealing, pulse cooking, resting time and how to make delicious stocks and gravies with the bones.
