Tina, Devon’s top female chef and past finalist of ITV’s Chef of the year will teach you how to pluck, skin, butcher and prepare a number of simple and delicious meals. She will share some of her favourite game recipes and after a pleasant days’ cooking will sit down with you for lunch to share the fruits of your labours.
Your guests back home will marvel at your newly-found cooking skills – after all how many hosts have the skills to dish up wild duck or a tender pigeon breast for dinner?
What does the course cover?
Topics include:
- Tips on hanging – humidity, temperature, length of time, bloom etc.
- Demonstrations on plucking, skinning, butchery and preparation of meat for cooking e.g. how to wrap pigeon or woodcock in bacon.
- Cooking techniques including sealing, pulse cooking and resting time
- How to make delicious stocks and gravies with the bones.
