Percy’s Fish Cookery Workshops
‘On a scale of one to ten how would you weigh up your fish filleting skills?’
At Percy’s we have our own license to buy at the daily fish auctions at Looe. There we select fish to purchase from the day boats and then bid for it when it comes up at auction. Each landing on any given day is different and we purchase what is best and in season.
Tina’s Fish cookery workshop will introduce you to a straightforward way of preparing seafood in a few easy steps. She has lived and worked in Devon almost 20 years and has developed a vast knowledge of preparing seafood at its best.
The fish workshop includes an early morning visit (optional) to
the fish market with Tony, where you will learn how to buy and how to
recognise if a fish is fresh by look and smell. We will show you how to
gut, fillet, de-scale and skin it later in our kitchen. By the way this
is not as messy as it sounds.
During the course you will gain knowledge on how to: purchase
fresh fish, prepare it in simple way and turn it into a delicious meal.
Tina will show you a number of dishes impressive and delicious enough
for any dinner party.

Topics covered:
- Demonstrations on how to scale, gut, fillet, pin bone and skin fish.
- Preparation techniques on how to shuck scallops & prepare squid.
- Cooking techniques including steaming, roasting, grilling, pan-frying, baking with pastry, fish pie, gravad mackerel, and how to cook perfect squid and scallops, how to make fish chowder, simple sauces to accompanying the dish.
